This recipe comes straight from our good friend Lindsay’s vegetarian food blog Sweet & Savory. Its a simple sandwich that was inspired by a baguette she had in London. This sandwich is one of her family’s go-to picnic sandwiches, and now ours too!!
No kidding, we have had this sandwich for either lunch or dinner almost every day this last week. It’s so simple and so fresh. Although, I think the best compliment came from one of our best (carnivore) friends who said that he was half-way through with his sandwich before he realized there was no meat in it!
Lindsay’s Tomato Basil Havarti Sandwich
Baguette, or any crusty artisan bread
1. Mix together one part pesto with one part mayo. Generously spread on both sides of bread.
2. Layer sandwich with Havarti, thick slices of tomatoes, and lots of fresh basil.
